Bikaneri Bhujia: desert se nikli sehri khan-paan ki pehchaan
Bikaner ki galiyon mein bhujia sirf namkeen nahi, ek roz ka saathi hai. Patla besan, kali mirch, lal mirch, ajwain aur dheere se kiya gaya talna—bas isi seedhi si baat ne isse alag pehchaan di. Marwari zubaan mein kahen toh, ghani mehnat aur sookhe mausam ne is sev-snack ko bilkul alag tevar diya. Purane dukaan-daar aaj bhi haath se iski consistency pakadte hain, taaki har dana ek jaisa crisp nikle. Bikaner mein chai ki thodi si chuski aur bhujia ki mutthi, dono milke din ko chalu kar dete hain. Jo cheez pehle ghar ki rasoi aur mohalla ki dukaan tak thi, woh ab shehar ki nishani ban chuki hai.
